My Favorite Healthy Snacks: The Sequel

I want you all to know that I'm totally aware that I posted a decadent chocolate cake last week, and I'm back to healthy snacks today.

Balance.

I make healthy snacks so that when a birthday comes around, I can indulge in a lovely slice (or two!) of birthday cake. And my mom's birthday is on Monday, so you know there will be more cake! It's our family favorite - Strawberry Shortcake!

Anyway, today I'm sharing a few of my favorites - they are so easy and so yummy, and healthy. All good things.


Nice Cream

Two words. GAME. CHANGER.

When Elliot started WW earlier this year, I started finding out how many points were in my favorite foods. My favorite ice cream is actually the Lidl brand and it's got cookie dough and chocolate and chunks of goodness and it is what dreams are made of. One night, we were scooping ourselves some snacks and he looked up our ice cream - and my beloved ice cream is 18 points a serving!!!!

18 POINTS. It's absurd. I was shook.

That's like half a day's worth of food for someone my size. Probably more.

Anyway, I was devastated, and personally I thought that was very rude.

But I clearly needed to find a replacement, and FAST.

I found out that you can make a cold, sweet treat out of frozen bananas and the game has been changed. It's delightful and super simple, and best of all, my soul is content again. You can find all kinds of recipes for different flavors on Pinterest, but my favorite recipe I’ve found is for Chocolate Peanut Butter Nice Cream. It’s quick and easy and SO GOOD!!

Notes.

This recipe does require a powerful food processor to really get that soft-serve texture. This is the one I use.

It does freeze well for a few days if you don’t finish it all in one sitting, just keep it in an airtight container.

I keep several frozen bananas on hand, so whenever I get the craving, I can whip up some nice cream in a couple minutes. Whenever they start to get a little too ripe, I just break them into chunks and toss them in a freezer bag for a rainy day. They’re also great for making thick and creamy smoothies and shakes!

 

 

Cauliflower Buffalo Bites

I'll admit, I don't like spicy snacks, but I'm sharing them because a lot of people do, and Elliot LOVES them. He will literally eat the entire batch in less than 7 minutes if I'm not watching. They're a great option if you want something like buffalo wings, but without the extra fat, breading and oil from deep-fried foods.

Now, before everyone gets all up in arms because they're not zero Weight Watchers points or have zero carbs or fat, let's be clear on something.

Air fried cauliflower is a MUCH healthier option compared to take-out buffalo wings. It just is. So these are healthy alternatives, for when you want a yummy snack, but want to stay on track.

Notes.

This recipe is 7 WW points per cup.

But, for my WW friends, you can use this recipe here for a 2 point serving. It's basically the same thing, just no breading. So you'll just coat the cauliflower in hot sauce and air fry it.

 

 

Cauliflower Nachos

I'll be honest, I may have eaten 90% of these before Elliot even got a chance to get a bite. Like nachos, they're addicting. The best part - you can top them with whatever you want!

Notes.

I baked these in the oven, but you can definitely throw a small batch in the air fryer for 15 minutes if you want.

I can't really tell you how many points these are, because, well, they're nachos, and what are servings with nachos?? But, the only points would be the cheese, oil, and whatever else you want to top it with so it's not super complicated.
