Fall Recipes For Cozy Vibes

Last week, I had my first evening by the fire pit. It was a chilly, clear night where you could see the stars. My parents joined us for a bit, and I made some soup to sip on. There's really nothing like sitting by an open flame, enjoying the company of those around you on a perfect night. It's so hygge.

Also, the soup was amazing. Once cold weather comes around, I make some kind of soup probably once a week. This particular soup was a new one, and friends, I'm inspired. I'm tired of the old recipes I used to make all the time. I want NEW SOUP.

I subscribed to my favorite food blogger, Half Baked Harvest, and she has released a plethora of delightful fall meals (mostly soups) for those chilly nights.

Some of them I've tried already, and some of them I haven't. Sorry, but until I get rich and famous from blogging, I have to work full-time, and as it turns out, working full-time is not conducive to making brand new recipes from scratch every night. It's just not.

Until then, I will share the recipes I've tried in a reasonable amount of time, because I am only human, and I will be totally honest about the reality of that.


Garlic Herb Cheese Bread

This was heavenly. It was my first attempt at baking bread from scratch and holy-cow-wow. It's light and fluffy with tons of flavor and SO GOOD. I think I ate half the loaf before dinner was even ready. It's even better with a little butter or dipped in soup. I will definitely be making this again. Maybe for Halloween!

Instant Pot Zuppa Toscana

This is my bonfire soup. It's got bacon and potatoes and sausage and is a better version of the Olive Garden staple. My dad said it was one of my best recipes, and it reminded him of a similar soup my grandmother used to make. I take that as high praise, and will tuck this recipe away for a few more meals this fall and winter.

Healthier Tortellini Vegetable Soup

This recipe was pretty easy and cooked in the crockpot. I love when my house smells delicious all day long. It was a wonderful no-meat soup, but I think I would add some tomatoes and maybe some sausage to it next time. Just to mix things up.

BONUS - My Super Easy Chili Recipe

This is my very first “original” recipe. It’s been tweaked over the years, and the best part? It's easy, filling, relatively healthy and done in less than 30 minutes. I always thought that the best meals were the ones that took hours of preparation. Well, both Elliot and my dad LOVE my chili. Throughout the fall and winter, I make it probably once a week, maybe two if we're pushing it. It's a go-to because it's so quick, and I really only have to do 10 minutes of actual cooking. I make it every year for Halloween, for my family and I to eat while we hand out candy. It's going to go great with the garlic bread! Enjoy this recipe - it’s kind of my baby.
