February Highlights

Happy Leap Day!

I’m really not sure I’ve ever really noticed Leap Day, but is it supposed to feel like a bonus 24 hours? Or like a really long February?

I don’t know.

Regardless, I’m making a point to be extra intentional today, because while every day is a gift, I can’t think of a reason NOT to commemorate this extra day.

That said, not only is it Leap Day, but it is also a Thursday, so I get to share my February Highlights and bid adieu to this winter month.

Will’s first haircut.

It was time. I knew it was time because I resorted to spraying his hair for church one Sunday, to absolutely no avail. sigh. Elliot took him to his favorite local barbershop and they did an incredible job on my almost-mullet-rocking dude. We also experienced a serious attitude adjustment, as documented below.

new truck.

We’ve been talking about a truck for years now. With the move to our new home, we knew it was time, but inventory has been a problem for quite a while. Elliot found a great deal on a truck he loved, and we now have a pickup truck that is super-useful and fun to drive.

fool me once.

I’m not one to watch a lot of TV, but I got hooked on this show. It’s a very twisty mystery on Netflix. A woman’s husband is killed, then she sees him on her nanny cam! WHAT. It’s also set in the UK, so of course, I’m all in.

lemon orzo recipe.

Elliot made a surprise dish a couple weeks ago and it was SO GOOD. I’m so impressed with my husband, sometimes. I had no idea what we were having, and then he plops down a bowl of chicken and orzo with a lemony tang and I immediately asked for it again. Soon. Now that I’ve seen the recipe, I’m confident I could make this dish, it’s that easy.

plant propagating.

As the girl who struggles to keep her plants alive, I’m going out on a limb here. I’m attempting to propagate two of my houseplants - a snake plant and a monstera. I have never done this before, but if I’m successful, I will be delighted. And also shocked. I am very excited for this and to learn something new!

bonus: campfire birthday cake + cupcakes

Okay, so this year my buddy, Ben’s birthday party theme was camping…and I got VERY creative with his cake. I am so happy with the way it turned out. His cake has vanilla layers with a graham cracker crust, a marshmallow/vanilla frosting filling and chocolate frosting to cover. How cute are those little s’mores cupcakes?!?

I used pirouette wafer cookies as the logs on the frosting campfire.

I just love it. It was SO cute.
