Recipes I Actually Want To Try

Okay, so we’re all stuck here for the foreseeable future, and there’s not much we can do, right?

FALSE.

We can do so many things while social distancing. As a typical enneagram type 3, I have created a list of things I want to do during “self-quarantine”. Yes, life looks a little different right now, but I’m doing my part to make the meantime as smooth as possible. I promise, I’m doing plenty of resting, and honestly, I’m loving slowing down a bit and cherishing the time a little more. Maybe I’ll make it a long term thing, maybe I won’t, who knows?? The possibilities are endless.

LOLZ. How fun was that sidetrack there? Yikes.

ANYWAY, I made a list of the things I want to do while social distancing, and it occurred to me that after my three-month-long hiatus on cooking and trying new recipes, I am finally excited to cook again.

You might be thinking “Rebekah, how can you not cook for three months? You’re poor, remember? You would have starved by now.” And this is true. Obviously, I’ve been cooking. But, if you don’t know this very important factoid about me already, I’m telling you now.

I. Hate. Cooking.

There, I said it. It’s out in the universe, and now you all know.

I do not like to be in my kitchen for more than an hour at a time, hence why I love my 30 minute Instant Pot meals. But, as adulthood goes, we have to do things we don’t like sometimes, and we try to make the best of it. While I really don’t enjoy the process of cooking, I do aspire to be the kind of adult who makes amazing appetizers to bring to potlucks and parties. I’m not a buffalo dip kinda girl, so I need to have 3-5 solid options that are 5 star dishes and also look pretty. Ambitious? Not hardly.

Sidenote: I have never fully grasped what “not hardly” actually means. Does it mean hardly? What does hardly even mean? Like barely? So “not barely”? It makes no sense.

You guys are heroes if you’re still reading. I am getting distracted left and right and what’s hilarious is I’m actually very excited about this post. Like, I’m writing it on SATURDAY. Friends, I usually don’t even have a clue what I’m writing about til MONDAY. The earliest. Ya girl has an idea and I am here for it and I can’t even get to the point to save my life.

SAINTS. You guys are saints, I tell you.

Most of you are probably familiar with the mania that is Pinterest. We love to find crafty ideas and new recipes there and it’s a fun journey of discovery. Or a journey of “ I need to do all of these things!! I’ll pin it for later! PIN PIN PIN PIN PIN!” Yes, I too, have experienced this. I have pinned dozens of recipes that are cool as all get out, but aren’t even things I would eat, much less would I realistically make. I mean let’s be honest, when a recipe says something like “All of the ingredients are already in your pantry!” and then the first ingredient is goat cheese, sorry friend, I’m out. I don’t know what kind of person casually keeps goat cheese like its a regular thing, but they are not my type of people.

On the other end of the spectrum, sometimes I’ll find something that looks so good, and its beautiful and has the word “easy” in the title, but then actually wants you to grow the tomatoes, dry them in the sun yourself, wait 3 days, and then add the other 37 ingredients to make 2.2 servings. No, thank you. That is not easy peasy lemon squeezy. That is difficult difficult lemon difficult.

Friends, I am on a quest to try some new recipes that may not be 30 minutes in an Instant Pot, but are delicious and relatively do-able for the common woman, or man. Some of them may even be pretty time-consuming, but good news, we all have a lot more time than originally planned nowadays.

So, without further ado (because there has already been way too much ado today), my list of recipes I actually want to try, and when I do, I will be happy to share them all on the blog.

  • Rotisserie Herb Butter Turkey

    Okay, so this isn’t a party dish/appetizer, but there’s a relatively funny story to go with it. Since people started buying out grocery stores, we haven’t been able to get our hands on any meat. Our freezer was getting a little on the lower side, but I had the extra turkey I bought in November when they were on sale. I decided that we could do a little project (to have something fun to do at home and you know, have food to eat) and learn how to use our rotisserie attachment on our grill. So, on Sunday, we are going to debut our rotisserie with a 12 lb. turkey. I looked up a few recipes and this one looks HEAVENLY. I promise I’ll let you all know how it goes.

  • Spinach Dip Bites

    I LOVE spinach dip. And bread, so these little guys look like they might be my next go-to snack for a party or game day!

  • Grape Jelly Meatballs

    I have heard about these so many times, but have never tried making them myself. I love meatballs, and I think they need to be on every single party menu ever. Sometimes, you just don’t want every snack to be made of bread. I mean, sometimes you do, obviously, but meatballs always make for a nice change of pace.

  • Taco Ring

    I’ve never seen this at any gathering, and I like the idea of making something that nobody else brings. Also, it’s SO easy, I might even make it for dinner! HA HA kidding. Kind of.

  • Zucchini Parmesan Crisps

    These pose for a (somewhat) healthier option. You can fry or bake them, so you can make them as healthy as you want! I’ve made something similar to them and they were just delightful, so I can’t wait to try these!

  • Cheesy Meatball Bites

    Okay, I clearly love my carbs. But look how simple these are!! Plus they have all my favorite things! Meatballs + Cheese + Bread = Happy Camper.

Try one of these during your time at home this week. I think I’m going to start with the meatballs, and obviously the turkey! Let me know how these recipes turn out, especially if its a 5 star crowd pleaser!
